These cookies are actually pretty delicious for a recipe that is on the healthier side. I use to have a hard time transitioning to a healthier option when it came to sweets, but now I actually prefer the healthier options. And these cookies are exactly why. It’s so easy to eat healthier when you create a recipe that tastes so similar to the unhealthy version. So I am SUPER exact to be sharing this ginger molasses cookies recipe with you today!
These Healthy Vegan Ginger Molasses Cookies are:
- bursting with hints of cinnamon and ginger.
- vegan and gluten free.
- refined sugar free.
- crunchy on the outside yet chewy on the inside.
You can enjoy these cookies any time of the year too, you don’t need to isolate them to the Christmas holidays. They are just too good to leave for a one-month indulgence.
You can also alternate the size of the cookies, I prefer small sized for this recipe. If you make them bigger you might have to bake them a little longer. The key is to watch the outside of the cookie verse the inside of the cookie. Once the outside is crisp and the inside is still soft, then they are done!
Ingredients needed for vegan ginger molasses cookies:
- Almond Flour
- Coconut Oil
- Oat Flour
- Baking Soda + Powder
- Coconut Sugar
- Ginger, Cinnamon + All Spice
- Unsweetened Coconut Milk
That’s it, pretty simple and straight forward ingredients. I think the molasses and the coconut oil really hold these cookies together. I always look for what ingredients for best to hold baked goods together in vegan recipes. It is really hard to bake without using eggs. I find sometimes they just crumble apart.. but these held together very well!

Healthier Vegan Ginger Molasses Cookies
- 1 cup Almond Flour
- 1 cup Oat Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1 /2 cup coconut sugar
- 1 tsp ground ginger
- 1 tsp cinnamon
- 2 tbsp molasses
- 1/4 cup coconut oil (solid)
- 2 tbsp unsweetened coconut milk
- Preheat Oven 350 degrees. Line a baking sheet with Parchment paper, set aside.
- In a large bowl, swift all the dry ingredients together.
- In a medium sized bowl, mix the wet ingredients together on medium speed for about 1 minute. It should be a creamy texture. Pour into dry ingredients bowl.
- Mix the bowl until the ingredients form a dough.
- Take 1 tbsp scoops of the dough and place on the parchment paper lined baking sheet. You can push them down onto the sheet. Bake for 10 minutes.
- Cool for 10 minutes. Eat!
