Dairy Free Tater Tot Casserole

Healthy version of the tater tot casserole! Lower calorie and no cheese or dairy used. Hearty dinner dish.

Ingredients
  

  • 1 lb extra lean ground beef
  • 1 bag frozen tater tots
  • 1 tablespoon oil
  • 1 large white onion diced
  • ½ cup green peas (frozen or can)
  • 2 tablespoon tomato paste
  • ½ cup corn (frozen or can)
  • 1 tablespoon Worcestershire
  • 2 cups beef stock (reduced sodium)
  • 2 tablespoon arrowroot powder (or cornstarch)
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 350 degrees
  • Heat oil in a pan on medium heat. Add the onion, sauce for 5 minutes until soft. 
  • Add ground beef to the pan, stir occasionally until fully cooked. Spoon off excess fat if necessary
  • Stir in the tomato paste and Worcestershire sauce. Add the beef stock, bring to a simmer, then cover pan and cook for about 20 minutes
  • After 20 minutes uncover the pan and continue to cook for 15 more minutes.
  • Add in corn and green peas. 
  • Add two tablespoon of arrowroot powder (or cornstarch) to  cup with 3 tablespoon of cold water, mix with whisk. Remove the pan from the heat and add half of the starch mixture to the meat. Make sure to stir to avoid lumps and give it a few minutes to thicken, then add the remainder. Continue to stir. Salt and pepper to preference.
  • Put meat mixture into oven proof dish, top with one layer of tater tots as shown in photos. 
  • Bake for 20-25 mins until the tater tots are cooked and the meat gravy is starting to leak out around the edges.
  • Serve and enjoy!
