Ingredients
  

  • 2 Medium Zucchini
  • 2 Eggs
  • ½ cup Flour
  • ½ cup Bread Crumbs
  • ¼ cup Parmesan Cheese
  • ½ teaspoon Garlic Powder
  • ½ tsp Onion Powder
  • Salt and Pepper (to preference)

Instructions
 

  • First you are going to slice the zucchini into ¼ inch rounds. Use a sharp knife to avoid ripping the zucchini. Put in a bowl. Sprinkle flour over the zucchini and toss to ensure each round is lightly coated without clumps. Set aside.
  • In a small bowl crack the egg and whisk until yolk and whites combines. Set aside. In a second small bowl, combine the bread crumbs, parmesan cheese, garlic powder, onion powder and salt + pepper.
  • Next your are going to take one flour coated zucchini round, dip it in the egg then dip it in the bread crumb mixture. Make sure it is fully coated before transferring it to the air fryer. Repeat this process for each zucchini round.
  • Bake in the air fryer at 400 degrees for 8 to 10 minutes (or until the coating is golden brown). Flip the rounds half way through the cooking time. Serve with any dipping sauce your heart desires!
