Chewy Caramel Coated Popcorn Recipe

Ingredients
- 1 ½ Cups Butter Cubed
- 2 ⅔ Cups Packed light brown sugar
- 1 Cup Golden Syrup
- 1 teaspoon Vanilla Extract
- 24 Cups Popped Popcorn
Instructions
- The first thing you are going to do is line two 15x10x1 inch pans with parchment paper.
- In a large saucepan, melt butter over medium-high heat. Add brown sugar and syrup, stirring to dissolve the brown sugar. Bring to a full rolling boil. Boil and stir for 1 minute.
- Remove from head and quickly stir in the vanilla.
- Pour the caramel mixture over popcorn; stir lightly to coat. Using a rubber spatula, press the popcorn into prepared pans.
- Set aside to cool for a little bit. Pull the caramel popcorn into pieces. You will want to store it in airtight containers until ready to eat or gift.
