Dry Ingredients:

Gluten Free Rolled Oats

Gluten Free Oat Flour

Raw Coconut Sugar

ground cinnamon

baking soda

baking powder

dark chocolate chips
(vegan ones if needed)

chopped natural walnuts
Wet Ingredients:
¼
cup
natural unsalted almond butter
3
tbsp
melted butter
1
egg
(can use a chia egg if making these cookies vegan*)

teaspoon
pure vanilla extract
Instructions
Preheat oven to 350°F. Line a baking sheet with parchment paper or silicone mat.
In a large bowl, whisk together dry ingredients (minus chocolate chips), set aside.
In a medium bowl, whisk together wet ingredients, set aside.
Pour wet ingredients into dry ingredient bowl. Fold ingredients together until combined. Then fold in chocolate chips.
Take VERY small handfuls of mixture roll into small balls (about 2 Tbsp). Flatten to baking sheet. Make about 20 cookies.
Bake for 10-13 minutes, or until cookies are golden outside and soft inside.
Notes
1 chia egg
: 1 tablespoon chia seeds mixed with 3 tablespoon of water. Leave for 10 minutes until a jell forms.
Keep these cookies in an air tight container in the fridge for up to one week.
