Oatmeal Walnut Cookies

Ingredients
  

Dry Ingredients:

  • ¾ cup Gluten Free Rolled Oats
  • ¼ Cup Gluten Free Oat Flour
  • ¼ cup Raw Coconut Sugar
  • ½ tsp ground cinnamon
  • ¼ teaspoon baking soda
  • ¼ tsp baking powder
  • tsp pink salt
  • ½ cup dark chocolate chips (vegan ones if needed)
  • ¼ cup chopped natural walnuts

Wet Ingredients:

  • ¼ cup natural unsalted almond butter
  • 3 tbsp melted butter
  • 1 egg (can use a chia egg if making these cookies vegan*)
  • ½ teaspoon pure vanilla extract

Instructions
 

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or silicone mat.
  • In a large bowl, whisk together dry ingredients (minus chocolate chips), set aside.
  • In a medium bowl, whisk together wet ingredients, set aside.
  • Pour wet ingredients into dry ingredient bowl. Fold ingredients together until combined. Then fold in chocolate chips.
  • Take VERY small handfuls of mixture roll into small balls (about 2 Tbsp). Flatten to baking sheet. Make about 20 cookies.
  • Bake for 10-13 minutes, or until cookies are golden outside and soft inside.

Notes

  • 1 chia egg: 1 tablespoon chia seeds mixed with 3 tablespoon of water. Leave for 10 minutes until a jell forms.
  • Keep these cookies in an air tight container in the fridge for up to one week.
