Healthier Vegan Ginger Molasses Cookies
These healthier ginger molasses cookies are crunchy on the outside yet chewy on the inside. Using oat and almond flour, and non processed sugars. {VEGAN + GLUTEN FREE!}

Dry Ingredients:
- 1 cup Almond Flour
- 1 cup Oat Flour
- 1 teaspoon Baking Powder
- 1 tsp Baking Soda
- 1 /2 cup coconut sugar
- 1 tsp ground ginger
- 1 teaspoon cinnamon
Wet Ingredients:
- 2 tbsp molasses
- ΒΌ cup coconut oil (solid)
- 2 tablespoon unsweetened coconut milk
Preheat Oven 350 degrees. Line a baking sheet with Parchment paper, set aside.
In a large bowl, swift all the dry ingredients together.
In a medium sized bowl, mix the wet ingredients together on medium speed for about 1 minute. It should be a creamy texture. Pour into dry ingredients bowl.
Mix the bowl until the ingredients form a dough.
Take 1 tablespoon scoops of the dough and place on the parchment paper lined baking sheet. You can push them down onto the sheet. Bake for 10 minutes.
Cool for 10 minutes. Eat!
