Healthier Vegan Ginger Molasses Cookies

These healthier ginger molasses cookies are crunchy on the outside yet chewy on the inside. Using oat and almond flour, and non processed sugars. {VEGAN + GLUTEN FREE!}

Ingredients
  

Dry Ingredients:

  • 1 cup Almond Flour
  • 1 cup Oat Flour
  • 1 teaspoon Baking Powder
  • 1 tsp Baking Soda
  • 1 /2 cup coconut sugar
  • 1 tsp ground ginger
  • 1 teaspoon cinnamon

Wet Ingredients:

  • 2 tbsp molasses
  • ΒΌ cup coconut oil (solid)
  • 2 tablespoon unsweetened coconut milk

Instructions
 

  • Preheat Oven 350 degrees. Line a baking sheet with Parchment paper, set aside.
  • In a large bowl, swift all the dry ingredients together.
  • In a medium sized bowl, mix the wet ingredients together on medium speed for about 1 minute. It should be a creamy texture. Pour into dry ingredients bowl.
  • Mix the bowl until the ingredients form a dough.
  • Take 1 tablespoon scoops of the dough and place on the parchment paper lined baking sheet. You can push them down onto the sheet. Bake for 10 minutes.
  • Cool for 10 minutes. Eat!
