Lemon Poppy Seed Loaf

Dry Ingredients
- 2 cups oat flour can grind rolled oats into flour
- ½ cup organic cane sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 2 tbsp lemon zest
- 2 tablespoon poppy seeds
Wet Ingredients
- ½ cup almond milk
- ⅓ cup coconut oil melted
- 1 egg or flax seed egg if making vegan
- ⅓ cup fresh lemon juice
- ¼ cup nut butter I used almond butter
Preheat the oven to 350. In a large mixing bowl, combine the dry ingredients including the lemon zest and poppy seeds and mix well.
In a small bowl, combine all wet ingredients. Slowly pour mixture into dry ingredient bowl. Continue to mix until batter is created
Transfer the batter to a greased loaf pan or baking dish. Bake for 30 - 45 minutes (or until golden brown on top and a toothpick comes on clean).
Remove from oven and allow to cool completely before serving!
