Lemon Poppy Seed Loaf

Ingredients
  

Dry Ingredients

  • 2 cups oat flour can grind rolled oats into flour
  • ½ cup organic cane sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tbsp lemon zest
  • 2 tablespoon poppy seeds

Wet Ingredients

  • ½ cup almond milk
  • cup coconut oil melted
  • 1 egg or flax seed egg if making vegan
  • cup fresh lemon juice
  • ¼ cup nut butter I used almond butter

Instructions
 

  • Preheat the oven to 350. In a large mixing bowl, combine the dry ingredients including the lemon zest and poppy seeds and mix well.
  • In a small bowl, combine all wet ingredients. Slowly pour mixture into dry ingredient bowl. Continue to mix until batter is created
  • Transfer the batter to a greased loaf pan or baking dish. Bake for 30 - 45 minutes (or until golden brown on top and a toothpick comes on clean).
  • Remove from oven and allow to cool completely before serving!
