Coffee Bean Snack-a-roons

a easy vegan and gluten free recipe filled with coffee and chocolate flavours. Enjoy this energy ball snack anytime of the day!

Ingredients
  

Balls

  • 1 cup rolled oats
  • ½ cup ground flaxseed
  • 1 tablespoon ground instant coffee
  • ¼ cup unsweetened shredded coconut
  • ½ cup almond butter (smooth)
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract

Chocolate Drizzle

  • ¼ cup coconut oil
  • ¼ cup cocoa powder sifted if necessary
  • 1 tablespoon maple syrup

Instructions
 

Balls

  • Stir together the oats, flaxseed, coconut and coffee in a medium bowl.
  • Add almond butter, maple syrup, and vanilla and mix well. Chill for 20 minutes. Roll into bite-sized balls.

Chocolate Drizzle

  • Melt coconut oil. Mix in cacao powder and maple syrup.
  • Drizzle mixture onto coffee bean balls (or dunk balls into chocolate using a fork)
