Coffee Bean Snack-a-roons

Balls
- 1 cup rolled oats
- ½ cup ground flaxseed
- 1 tablespoon ground instant coffee
- ¼ cup unsweetened shredded coconut
- ½ cup almond butter (smooth)
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
Chocolate Drizzle
- ¼ cup coconut oil
- ¼ cup cocoa powder sifted if necessary
- 1 tablespoon maple syrup
Balls
Stir together the oats, flaxseed, coconut and coffee in a medium bowl.
Add almond butter, maple syrup, and vanilla and mix well. Chill for 20 minutes. Roll into bite-sized balls.
