For the stir fry
- 1½ cup uncooked brown rice
- 2 tablespoons extra virgin olive oil
- 14 ounces extra firm tofu
- 1 large white onion minced
- 1 red bell pepper roughly chopped
- 2 medium zucchini cut into cube pieces
For the maple ginger sauce
- 3 cloves garlic
- 2 tablespoons fresh ginger
- 2 tablespoons pure maple syrup more to taste
- ½ cup low sodium tamari sauce
- ¼ cup water
- ¼ cup rice wine vinegar
- ¼ cup extra virgin olive oil
Rice & Tofu
Cook the brown rice according to directions on package.
Cut the tofu into slices and press with a clean dish towel (or paper towel) to remove excess fluid (press twice). Cut the tofu slices into small cubes.
Heat the olive oil in a large nonstick pan over medium heat.
Add the tofu, peppers, zucchini and onion. Pan-fry until golden brown. Remove from heat.
Add cooked rice, remaining spices and maple ginger sauce. Mix.
