Prep Time 10 minutes mins
Cook Time 9 minutes mins
Total Time 19 minutes mins
- ½ cup Brown Sugar packed
- ½ tablespoon vanilla extract
- 1 large egg room temperature
- ½ cup coconut oil melted
- 1 ¼ cup whole wheat flour
- ½ teaspoon baking soda
- ¼ teaspoon fine salt
- 1 pinch cinnamon
- ½ cup dark chocolate chips OR MORE!
Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper. Set aside for now.
Mix together the brown sugar, coconut oil, vanilla, and egg in a medium-size bowl. I used a hand mixer to make it extra creamy and smooth.
Add in the whole wheat flour, baking soda, and salt. Fold in slowly then combine well. Add in the chocolate chips!
Scoop cookie dough, with a spoon or cookie scooper, onto the prepared baking sheet from earlier.
Bake in the oven for about 9 minutes or until golden on the top.
Once done, pull from the oven and allow them to cool for at least 5 minutes before removing them from the sheet pan. Then enjoy!
