Halloween Bat Pumpkin Muffins

Dry Ingredients
- 1 ½ cup all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking power
- ½ tsp salt
- 1 tablespoon Pumpkin Spice (more or less to preference)
- ½ cup brown sugar
- ½ cup white sugar
Wet Ingredients
- 2 large eggs
- ¼ cup whole milk
- 1 ¼ cup pumpkin puree
- ½ cup extra virgin olive oil
- 1 teaspoon vanilla extract
Preheat oven to 425 degrees. Line a muffin tin with muffin inserts and grease with cooking spray. Set aside.
The first thing you are going to do is combine all the dry ingredients into a large bowl. Mix them until evenly combined. Next you are going to take a separate bowl and mix together all the wet ingredients until smooth.
Once you have your batter completely mixed, you are going to transfer it into a lined greased muffin tin (or a silicone muffin tin). Make sure you only fill them up ¾ of the way so they don't over flow when they are baking.
Place the muffin tin in the oven at 425 degrees for 5 minutes then reduce the temperature to 350 degrees for 15 more minutes. Cool muffins on a rack for at least 5 minutes before serving and placing the bat inserts in the middle!
