Beet and Quinoa Summer Salad

fresh crunchy and sweet salad packed with protein and healthy grains. Vegan, Dairy Free, Dairy Free and refined sugar free!

  • 1 Beet
  • 1/2 cup Quinoa cooked
  • 2 tbsp chia seeds
  • 6 almonds natural (unsalted)
  • Green Leaf Lettuce


  • 2 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 2 tbsp ¬†extra virgin olive oil
  • 1 tbsp pure organic maple syrup


  • Steam the roots of the beet until it is soft enough just to pierce it with a fork OR boil the beet in water until it is soft. Slice beet into 1/2 inch pieces.

For Salad

  • Combine all ingredients and arrange on a plate

For Dressing

  • Combine all ingredients. Stir until mixture is smooth and well dispersed.
