4 Ingredient Gluten-Free Shortbread Cookies

Soft, buttery, delicious 4-ingredient shortbread cookies made completely dairy and gluten-free! These shortbread cookies are perfect for a Christmas cookie exchange or holiday party.

Ingredients
  

  • ½ cup soft non-dairy butter
  • 2 ¼ cups gluten-free flour
  • cup pure maple syrup
  • ½ teaspoon pure vanilla extract
  • ½ - 1 cup red and green candied cherries optional

Instructions
 

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper or silicone mat.
  • Using an electric beater on medium, combine butter, maple syrup and vanilla extract.
  • Fold in flour using a wooden spoon. Add in candied cherries (if using).
  • Once all well mixed, make small balls and push onto baking sheet, forming cookies.
  • Bake for 12-16 minutes, or until edges are golden brown.
  • Cool and serve!
