Soft, buttery, delicious 4-ingredient shortbread cookies made completely dairy and gluten-free! These shortbread cookies are perfect for a Christmas cookie exchange or holiday party.

- ½ cup soft non-dairy butter
- 2 ¼ cups gluten-free flour
- ⅓ cup pure maple syrup
- ½ teaspoon pure vanilla extract
- ½ - 1 cup red and green candied cherries optional
Preheat oven to 350 degrees. Line a baking sheet with parchment paper or silicone mat.
Using an electric beater on medium, combine butter, maple syrup and vanilla extract.
Fold in flour using a wooden spoon. Add in candied cherries (if using).
Once all well mixed, make small balls and push onto baking sheet, forming cookies.
Bake for 12-16 minutes, or until edges are golden brown.
Cool and serve!
