Maple Ginger Tofu Stir Fry with Rice {Vegan & Veg}

For the stir fry

  • cup uncooked brown rice
  • 2 tablespoons extra virgin olive oil
  • 14 ounces extra firm tofu
  • 1 large white onion minced
  • 1 red bell pepper roughly chopped
  • 2 medium zucchini cut into cube pieces

For the maple ginger sauce

  • 3 cloves garlic
  • 2 tablespoons fresh ginger
  • 2 tablespoons pure maple syrup more to taste
  • ½ cup low sodium tamari sauce
  • ¼ cup water
  • ¼ cup rice wine vinegar
  • ¼ cup extra virgin olive oil


Maple Ginger Sauce

  • Blend all the sauce ingredients together in a food processor until smooth.

Rice & Tofu

  • Cook the brown rice according to directions on package.
  • Cut the tofu into slices and press with a clean dish towel (or paper towel) to remove excess fluid (press twice). Cut the tofu slices into small cubes.
  • Heat the olive oil in a large nonstick pan over medium heat.
  • Add the tofu, peppers, zucchini and onion. Pan-fry until golden brown. Remove from heat.
  • Add cooked rice, remaining spices and maple ginger sauce. Mix.
