MAPLE GINGER TOFU STIR FRY

This sweet and savory maple ginger tofu rice is a deliciously healthy lunch or dinner that you can easily whip together! It's packed with great flavours.

INGREDIENTS

For the stir fry

- uncooked brown rice - extra virgin olive oil - extra firm tofu - white onion - red bell pepper - zucchini

For the maple ginger sauce

- cloves garlic - fresh ginger - pure maple syrup - low sodium tamari sauce - water - rice wine vinegar - extra virgin olive oil

Rice has always been my favourite go-to lunch. There are so many options for variations and it is easy to get your creativity spark in for the day!

Did you know that you can marinate tofu like a steak? Did you know you can brush it with olive oil, create kabobs then grill it? Did you know you can blend it into a sauce to replace mayo or sour cream?

HOW TO MAKE MAPLE GINGER TOFU STIR FRY

Cook the brown rice according to directions on package. Cut the tofu into slices and press with a clean dish towel (or paper towel) to remove excess fluid (press twice). Cut the tofu slices into small cubes.

Heat the olive oil in a large nonstick pan over medium heat. Add the tofu, peppers, zucchini and onion. Pan-fry until golden brown. Remove from heat.

Add cooked rice, remaining spices and maple ginger sauce. Mix.
