Total Time 1 hour hr 30 minutes mins
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
Make The Dough
In a medium bowl, whisk together flour, baking powder, and salt.
In a large mixing bowl, beat butter and sugar until light and fluffy (about 2 minutes).
Add egg, vanilla, and almond extract. Mix until combined.
Gradually add the dry ingredients, mixing until a soft dough forms.
Chill the dough
Divide dough in half, flatten into discs, wrap in plastic, and refrigerate for at least 1 hour (this prevents spreading).
Cut and bake
Preheat oven to 350°F (175°C).
Roll dough on a lightly floured surface to ¼ inch thickness.
Use a Christmas tree cookie cutter to cut shapes. Place on parchment-lined baking sheets.
Bake for 8–10 minutes, until edges are just set. Do not overbake. Let cool completely before decorating.
Decorate
Outline and flood cookies with green royal icing.
Add sprinkles or small candies while the icing is wet.
Let icing dry completely before stacking or storing.
