Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract

Instructions

Make The Dough

  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large mixing bowl, beat butter and sugar until light and fluffy (about 2 minutes).
  • Add egg, vanilla, and almond extract. Mix until combined.
  • Gradually add the dry ingredients, mixing until a soft dough forms.

Chill the dough

  • Divide dough in half, flatten into discs, wrap in plastic, and refrigerate for at least 1 hour (this prevents spreading).

Cut and bake

  • Preheat oven to 350°F (175°C).
  • Roll dough on a lightly floured surface to ¼ inch thickness.
  • Use a Christmas tree cookie cutter to cut shapes. Place on parchment-lined baking sheets.
  • Bake for 8–10 minutes, until edges are just set. Do not overbake. Let cool completely before decorating.

Decorate

  • Outline and flood cookies with green royal icing.
  • Add sprinkles or small candies while the icing is wet.
  • Let icing dry completely before stacking or storing.
