Matcha Sugar Cookies
- 2 ¾ cups all-purpose flour
- 2 teaspoon cornstarch
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1½ tablespoon culinary-grade matcha powder
- 1 cup unsalted butter softened
- 1¼ cups granulated sugar
- 1 egg
- 1 egg yolk
- 2 teaspoon vanilla extract
Cream Cheese Frosting
- 4 oz cream cheese softened
- ¼ cup unsalted butter softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- 1-2 tablespoon milk or cream as needed

Make the Cookies
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a medium bowl, whisk together flour, cornstarch, baking soda, baking powder, salt, and matcha powder.
In a large bowl, beat butter and sugar together until light and fluffy, about 2–3 minutes.
Add egg, egg yolk, and vanilla extract. Mix until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
Scoop about 2 tablespoons of dough and roll into balls. Place 2 inches apart on baking sheets and gently flatten the tops.
Bake for 9–11 minutes, until edges are set but centers are still soft.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Make the Frosting
Beat cream cheese and butter together until smooth and creamy.
Add powdered sugar, vanilla, and salt. Beat until fluffy.
Add milk 1 tablespoon at a time until frosting reaches a thick but pipeable consistency.
Decorations
Once cookies are completely cool, pipe or spread frosting on top. Finish with green sprinkles, gold sugar pearls, or shamrock decorations.
