The first thing you are going to do is combine chopped rhubarb and honey over medium heat. Cook until the rhubarb is tender and the honey has turned into a syrupy consistency. This should take about 10 minutes.
Pour the mixture into popsicle molds, sprinkle the granola on top, and insert popsicle sticks. You may have to press in the granola a little so it freezes to the mixture
