Ingredients

  • 8 oz Cream Cheese (softened)
  • 1 cup Feta Cheese  (crumbled)
  • 1 cup Crushed Walnuts (unsalted)
  • 1 ½ cup dried cranberries
  • cup fresh rosemary (stems removed and chopped)
  • 4 flour tortillas (I used spinach ones for the green color)

Instructions

  • Place cream cheese in a small bowl and using a hand mixer beat until fluffy. Next you are going to add all the remaining ingredients, except for the flour tortillas and continue to mix. You want to make sure everything is evenly combined.
  • Next, lay out your tortillas and spread the mixture evenly leaving a ½″ border. Do not spread too thick or you will have trouble rolling them. The mixture can be difficult to spread. I’ve found that the back of a metal spoon works the best!
  • Roll each tortilla very tightly in plastic wrap and refrigerate for at least 1 hour (best if chilled for 24 hours). Once ready, remove the plastic wrap and slice into pinwheels. If you are making ahead, I recommend cutting them after the 24 hours and keeping them in an air tight container until ready to serve.
