These cranberry walnut pinwheels are so ridiculously simple, but bring big flavor and in a can’t-eat-just-one finger food appeal. They aren't your typical pinwheels, but that's what makes this a little twist on a holiday classic: the cranberries and walnuts.
The best part is that these festive pinwheels are easy to make and can last for up to 5 days in the refrigerator! So go feel free to make them in advance so lessen the amount of cooking you have to do leading up to the big day!
So with that being said, let's jump into this cranberry pinwheel recipe!
How to Make These Cranberry Walnut Pinwheels
The ingredient list is nice and short with these pinwheel! You only need 6 ingredients to make these delicious bites!
- cream cheese (softened to room temperature)
- feta cheese crumbled
- crushed walnuts (unsalted)
- dried cranberries
- fresh rosemary (stems removed and chopped)
- flour tortillas (I used spinach ones for the green color)
The first thing you are going to do is place cream cheese in a small bowl and using a hand mixer beat until fluffy. Next you are going to add all the remaining ingredients, except for the flour tortillas and continue to mix. You want to make sure everything is evenly combined.
Next, lay out your tortillas and spread the mixture evenly leaving a ½″ border. Do not spread too thick or you will have trouble rolling them. The mixture can be difficult to spread. I’ve found that the back of a metal spoon works the best!
Roll each tortilla very tightly in plastic wrap and refrigerate for at least 1 hour (best if chilled for 24 hours). Once ready, remove the plastic wrap and slice into pinwheels. If you are making ahead, I recommend cutting them after the 24 hours and keeping them in an air tight container until ready to serve.
Tips for Making Cranberry Pinwheels
- Make sure you have all the ingredients on hand before you begin.
- Make sure your cream cheese is at room temperature before you start mixing it. This will help it combine easier
- When you are rolling them, make sure you do so EXTRA tightly. You want to make them firm.
- If you are having trouble keeping them rolled, put in a few toothpicks until they have cooled in the fridge.
- Make sure you leave a ½″ border when spreading the mixture to avoid over flowing on the edges.
