How to Make Pink Macaroon Cupcakes
Here are the ingredients to make these cute pink macaroon cupcakes! Starting with ingredients for the cupcakes:
- all-purpose flour
- baking powder
- baking soda
- salt
- white granulated sugar
- butter
- eggs
- vanilla extract
- buttermilk
- red food coloring
For the frosting:
- butter
- cream cheese
- powdered sugar
- vanilla extract
- salt
- red food coloring
Topped with edible roses and a few macaroon cookies! I bought my macaroons from our local bakery. Also, you will need some pink cupcake liners!
The first thing you are going to do it preheat the oven to 350°F. Then line a cupcake pan with your cupcake paper liners and grease. Next, in a large bowl whisk together the flour, baking powder, baking soda, salt, and sugar.
Add in the butter. I recommend using a mixer to combine all the ingredients here. Mix on a medium speed until the mixture looks like coarse crumbs.
Mix in the eggs one at a time. Add the vanilla and buttermilk, and stir. Add the red food coloring and stir until the pink color is achieved. Scoop the batter into the prepared pan. You want to fill the cups half full. Bake for 15 to 17 minutes, or until the tops spring back when lightly touched. Remove from oven, and set aside to cool.
While the cupcakes are cooling you can work on your cream cheese frosting. Combine butter and cream cheese in the bowl of a stand mixer and beat until creamy and lump-free. Add vanilla extract and salt, and stir. With the mixer on low, add powdered sugar until well combined. Add in food coloring and mix again. Once finished, add to a piping bag or spoon onto completely cooled cupcakes!

- ¼ teaspoon salt
- 4 cups powdered sugar

- 4-6 drops red food coloring
