Coming at you with a skinny dessert recipe post today. These Skinny Chocolate Chip Raspberry Rice Krispies are so good and taste like the real deal! After the holidays I know it can be hard when you are still craving those sweets but want to start eating better and getting the "new you" back on track. So I love developing recipes that give you the best of both world!
You can eat these Chocolate Chip Raspberry Rice Krispies treats and time of the day because they really are that delicious and healthy. I kept the ingredients minimal so that you can also whip them up in a pinch. I love having healthy recipes like this on hand to make if I am seriously craving some sweetness... especially when I am pregnant!
So lets dive right into this skinny Rice Krispie recipe shall we?!

Skinny Chocolate Raspberry Rice Krispies Ingredients:
- Brown Rice Krispie Cereal: I love this brown Rice Krispie cereal! It is the exact same as the traditional Rice Krispie but just a healthier version... and honestly you cant even tell the difference!
- Maple Syrup: I used maple syrup instead of using marshmallows to hold everything together. This is a healthier option but you can totally use marshmallows if you would rather that!
- Unsalted Almond Butter: This is just another ingredient to help bind the rice cereal together! You can barely taste it in the end. If you don't like almond butter you can switch it out for any nut or seed butter you like!
- Raspberries
- Coconut Oil: Any cooking coconut oil will work here! This is to replace the butter in a traditional Rice Krispie square recipe.
- Dark Chocolate Chips: Make sure you use a dairy free chocolate chip if needed. I like to use a vegan brand for my chocolate chips because I know they are 100% dairy free.
How to make these healthy Rice Krispie Treats:
- Start by heating up the coconut oil and maple syrup in a medium size sauce pan. Once it is fully melted reduce heat.
- Add the raspberries to the coconut oil/maple syrup. Continue to stir them until they break down into a sauce.
- Once raspberries are fully disintegrated, add in the almond butter. Continue to stir until mixture is melted down to a liquid. Keep stirring to ensure the mixture doesn’t burn to bottom of pan. Once everything is fully melted, remove from heat. I found it better to wait for the mixture to cool slightly before adding in the cereal so it does not get soggy.
- Let the mixture cool for 5 minutes then fold in the brown Rice Krispies and chocolate chips. Make sure they are fully coated. The Rice Krispies will all turn pink from the raspberries. Your chocolate chips may melt if you did not let the mixture cool enough before adding them in. If you don't mind melted chocolate chips, you can totally skip the cooling step!
- Transfer this mixture to a lined 9 by 13 inch baking pan. I lined mine with parchment paper but you can use whatever you have on hand.
- Smooth out Rice Krispies onto the baking pan, and place in the fridge for at least 30 minutes. I found putting them in the fridge really solidified them! You can skip this step if you like warm Rice Krispie squares. Totally up to you!
- Remove, cut into squares, serve or place back in the fridge in an air tight container! This recipe makes 10-16 squares depending on how thick you made them. I made mine a little on the thinner side so that they are extra "skinny" haha! But you can reduce the size of your pan and make thicker squares. Totally up to you again!
This recipe is very moldable to whatever you prefer! Make sure you follow the instructions exactly before making alterations to ensure your squares turn out as delicious as mine did!!

Raspberries are not only delicious but also very good for you! They are low in calorie, but high in antioxidants, vitamins and fibre! According to Healthline, They have been said to protect against diabetes, cancer, obesity, arthritis as well as provide anti-aging effects! So if you are looking for a yummy fruit to add to your diet, I highly recommend raspberries!
I know a lot of people get worried when adding fruit to their diet if they are trying to lose weight but I think having natural fruit sugars in your meal plan will really help curb those sugar cravings and help you avoid that sugar crash!
