These taste so good and are super easy to make!! So let's get started!
How to Make Easter Birds' Nest Vanilla Cupcakes Recipe?
This recipe is relatively straightforward. If you don't want to make the cupcakes from scratch, use a boxed cupcake mix and create the Easter bird's nest on top. Whatever is easiest for you and your family!
For The Vanilla Cupcakes:
- all-purpose flour
- granulated sugar
- baking soda
- baking powder
- kosher salt
- unsalted butter
- egg whites
- vanilla extract
- sour cream
- whole milk
Before you start, preheat the oven to 350 degrees F and place cupcake papers or silicone molds in a cupcake pan. Next, sift the flour, sugar salt, baking soda, and powder into a large bowl, and whisk them all together.
Separate the eggs and only keep the egg whites. In a second bowl, whisk together the wet ingredients until well combined. Add the wet ingredients to the dry ingredients. Mix them all together! Scoop the batter evenly into cupcake papers, filling each paper with about ⅔ the way up. Bake for about 16-19 minutes or until the centers are springy to the touch and not wet! Allow the cupcakes to cool before adding the buttercream frosting.
For the Buttercream Frosting:
- confectioners sugar
- unsalted butter
- vanilla extract
- heavy cream
- kosher salt
- whole milk
In a stand mixer fitted with a paddle attachment, cream the room-temperature butter first then add in the confectioner's sugar in two parts. Add salt, milk, cream, and vanilla. Mix until fluffy and light. Transfer to a piping bag and pipe a large blob of buttercream on each cupcake AFTER they have cooled.
For The Bird's Nest Topping:
- Chocolate shavings
- Cadbury mini Eggs
Top the vanilla cupcakes with the chocolate shavings and then 3 mini eggs to create a bird's nest appearance.
How to Store Easter Birds' Nest Vanilla Cupcakes Recipe?
Store your vanilla cupcakes in an airtight container at room temperature, where they'll keep for up to three days. You can also freeze them for up to two months (not the frosting just the cupcakes themselves). Just let them thaw overnight on the counter before serving. Obviously, they are best when eaten the day they are made though! They may lose their moisture a tad bit when frozen or left in the fridge too long.
