Nothing says Christmas baking like the taste of gingerbread! These gluten free chocolate dipped gingersnaps are a keeper!
Gingerbread cookies are always such a staple at this time of the year, especially in my family. I love family traditions. My favourite part of Christmas, since I was a child, was getting my grandmas massive tin of homemade cookies.
Opening up that tin to release all the smells of Christmas joy was always such a warming feeling. She would make everything from a regular gingerbread cookie to sweet caramel cookie squares.
These traditions are definitely ones I want to carry on to my children, and their children... soooo Mom, start baking!!!! hehe
Have you ever wonder what is actually in a gingerbread cookie? Is it raw ginger? is it bread? I actually had no idea until the day I sat down to create my own recipe for it.
Gingerbread cookies are usually just a broad term for cookies that are flavoured with cloves, nutmeg and cinnamon. They can be hard or soft, big or small.. they can even make cute little houses or scary looking men.
How ever you like your gingerbread, you have to try it dipped in chocolate!
These gluten free chocolate dipped gingersnaps are by far the best thing ever. Not trying to brag or anything.. but I basically am. These were such a hit in my house. Even Dylan ate them!! SAY WHAT?! That is of course after he inhaled half a pizza.. but hey who am I to judge! I wish I could eat like him and still keep a fit figure like that!
Unfortunately I have to keep working on my bride bod this Christmas season.. need to limit my cookie intake and TRY to eat healthy. My goal is to eat healthy ALL holiday season, then have a cheat meal on actual Christmas Day. I think thats a fair goal for myself! Besides I love cooking and baking for other people more then I like cooking for myself. I will probably bake a ton of cookies and pass them out to whoever is brave enough to try my "healthy" treats hehe
Although all my baking is gluten and dairy free, making it healthy in my opinion.. doesn't mean you should go ahead and eat the entire batch yourself in one sitting. You still need to eat in moderation. Just because something is labelled as a HEALTHIER OPTION, doesn't mean you won't gain weight from consuming them.
I made this mistake back in the day when I started making vegan cheesecake, like my Chocolate Cheesecake Cups.. When I first discovered how delicious these were I made them all the time and would eat one (or two opps) after dinner every night.. Soon I started gaining a few pounds and I couldn't understand why. SO I went back to eating my usual diet, minus the delicious vegan cheesecake and then BOOM the weight was back off.. Sure just so your aware, you still need to watch how much you eat of these "healthy" baking desserts!
These gluten free chocolate dipped gingersnaps are basically the perfect combination.
Christmas + Chocolate = Heaven.
For these gluten free chocolate dipped gingersnaps you will need:
- Spelt Flour
- Dark Chocolate Chips
- Dairy Free Butter
- Ginger spices
- An Egg
- Molasses
- Cane Sugar
- Vanilla Extract
- Cute Festive Sprinkles
And some other but not as important ingredients! You will also need a food processor or a heavy duty blender to turn your almonds into a nice fluffy flour!
You can always opt out of the fun sprinkles but I find that they just really turn this recipe into a Christmas recipe. You could make plain Jane (no offence to Janes) cookies any day of the year, but adding in the colours of Christmas really spark the spirit of Christmas.

Gluten Free Chocolate Dipped Gingersnaps
Equipment
- Mixer
Ingredients
Dry Ingredients
- ½ Cup organic cane sugar
- 2¼ cup whole grain Spelt flour
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- 2 teaspoon ground ginger
- ½ teaspoon pink salt
- 1 cup Dark chocolate chips
Instructions
- Preheat oven to 350° and line a baking sheet with parchment paper.
- Using a mixer (or strong arm), combine all wet ingredients in a medium bowl.
- Combine all dry ingredients (minus chocolate chips) in a seperate bowl and then slowly add to the mixer of wet ingredients.
- Cover the dough and place it in the fridge for one hour until it is firm.
- Roll dough out into ¼ inch thick sheet. Using a mason jar lid or cookie cutter, cut out small circles and put on baking sheet.
- Bake these cookies for 10 minutes or until golden brown.
- Remove from oven and let cool for at least 15 minutes.
- In a small bowl, melt chocolate chips in microwave. Dip cookies into melted chocolate, place back on baking sheet and put in fridge until chocolate hardens.
- Enjoy!
