Hope you are all enjoying your last weekend of the summer. I can not believe how fast it went this year. Are all the kids out there eager to head back to school!?
This is the first year EVER that I am not going back to school. I still can not believe it. Seems so surreal for me. I am officially a university grad which is so exciting. Starting my "big girl career" in the hospital next week. Im so nervous yet so excited. I'm ready for this next step.
This weekend, Dylan and I are going camping! We finally purchased our trailer. We could not wait to get out there and use it at least once before the end of the summer!

Anyways now for the recipe. This lemon poppy seed loaf is 100 percent vegan and gluten free. It's definitely a delicious treat that fits into my diet.
There is sugar in it to give it a dessert taste so it is not something ill be eating all the time, but like I said, it is nice to be able to treat yourself every once in a while! - balance is key.
Lemon Poppy Seed Loaf Ingredients:
- oat flour
- organic cane sugar
- baking powder & baking soda
- salt
- lemon zest & lemon juice
- poppy seeds
- almond milk
- coconut oil
- egg or flaxseed egg
- nut butter (of choice)
It is also considered flourless because of the use of oats as the base ingredient. If you are into the flourless recipes this one is for your books!
Flourless recipes are great for people who have a hard time digesting dense flours.. such as gluten intolerance! So if you are someone who needs to bake without wheat flour, than oat flour is a great option for you!
If you do not have poppy seeds, you can always throw in chia seeds instead. I have tried both and it is just as good!
When I was first gathering ingredients for this recipe, I had a hard time finding poppy seeds for some reason. Not sure why, but apparently not a lot of people use them in cooking or baking. I had to actually go to my local health foods store to get them!

Lemon Poppy Seed Loaf
Ingredients
Dry Ingredients
- 2 cups oat flour can grind rolled oats into flour
- ½ cup organic cane sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 2 tbsp lemon zest
- 2 tablespoon poppy seeds
Wet Ingredients
- ½ cup almond milk
- ⅓ cup coconut oil melted
- 1 egg or flax seed egg if making vegan
- ⅓ cup fresh lemon juice
- ¼ cup nut butter I used almond butter
Instructions
- Preheat the oven to 350. In a large mixing bowl, combine the dry ingredients including the lemon zest and poppy seeds and mix well.
- In a small bowl, combine all wet ingredients. Slowly pour mixture into dry ingredient bowl. Continue to mix until batter is created
- Transfer the batter to a greased loaf pan or baking dish. Bake for 30 - 45 minutes (or until golden brown on top and a toothpick comes on clean).
- Remove from oven and allow to cool completely before serving!
