Todays recipe is a fresh salad that is perfect for this summer weather! I love the texture of the lettuce with the beets. Ukrainian runs in my blood so maybe that is the reason why I love beats so much!
Beets are amazing for you too. Beets are an excellent energy booster. They are great for athletes because they increase the amount of oxygen that cells can absorb by up to 400%! They also help combat anemia and other blood disorders. The red pigments in beets give anti-cancer functions and make them a strong anti-inflammatory food.
Kind of a fun fact (but probably not for the person experiencing it).. the red pigments can cause beeturia in some people. Beeturia is a condition that produces harmless red urine in some people!
Beet and Quinoa Summer Salad Ingredients:
- Beet
- Quinoa (cooked)
- Chia seeds
- Almonds
- Green leaf lettuce
- Red wine vinegar
- Maple Syrup
- Olive Oil
The dressing in this recipe is smooth and light which allows your tastebuds to truly enjoy the juicy flavoured beats. I added some chai seeds not only because
I am addicted to them but because they are a great protein source. I make sure to have a protein source in EVERY meal. Protein is great for your body of course, but also allows you to feel full longer.

Beet and Quinoa Summer Salad
Ingredients
- 1 Beet
- ½ cup Quinoa cooked
- 2 tablespoon chia seeds
- 6 almonds natural (unsalted)
- Green Leaf Lettuce
Dressing
- 2 tablespoon red wine vinegar
- 1 teaspoon dijon mustard
- 2 tablespoon extra virgin olive oil
- 1 tablespoon pure organic maple syrup
Instructions
- Steam the roots of the beet until it is soft enough just to pierce it with a fork OR boil the beet in water until it is soft. Slice beet into ½ inch pieces.
For Salad
- Combine all ingredients and arrange on a plate
For Dressing
- Combine all ingredients. Stir until mixture is smooth and well dispersed.
