Hi beauties!
I have an awesome healthy energy ball for you today. It is a perfect morning snack to get your energy levels up and stomachs satisfied. This recipe combines creamy almond butter, rolled oats and ground flaxseed mixed with ground coffee beans which are then rolled into bite-size balls! Oh and the best part, drizzled with fresh chocolate! This recipe will kill your sweet tooth and your mid-day slumps.
Coffee Bean Snack-a-roons Ingredients:
- rolled oats
- ground flaxseed
- instant ground coffee
- unsweetened shredded coconut
- creamy almond butter
- maple syrup
- vanilla extract
If you don't have almond butter your can sub in some peanut butter instead. Just make sure its natural and organic. Also if you do not have any ground coffee beans you can use ground expresso (you might just want to use half the amount in this case).
If you aren't a caffeine person, feel free to use any decaf instant coffee instead of the regular instant coffee! This will give the same flavours but wayyyyy less caffeine (so yes you can eat one before bed if you desire haha)
Coffee Bean Snack-a-roons Recipe Tips:
When your rolling these into balls and your finding they are a little too dry, add some more almond butter. Some almond butters have less oils/liquid in them which may cause alternate results when creating this recipe.
Once you have these balls all rolled up, time to drizzle some chocolate! This is my go to chocolate recipe (coconut oil and cocoa). Mix them up then drizzle them onto the balls or even take a fork and dunk the balls into the chocolate. Use less coconut oil (or more cocoa) if your finding it too runny.
Another great tip is making sure your balls are either super cold or frozen. This coldness will cause the chocolate to solidify once it touches the balls which will not only make less of a mess for you but will also give that chocolatey shell everyone loves to chomp down on!
I should also mention that you can totally eat these without the chocolate portion. If you don't like chocolate or want to save on calories, skip the chocolate drizzle and enjoy this healthy no bake snack entire on its own!
You can store these in your fridge, in an air tight container, for a week. OR you can freeze them and pull a few out to put in your lunch bag for work/school. By the time you go to enjoy them, they will already be thawed out! And as a bonus, they will keep the rest of your lunch nice and cold!

Coffee Bean Snack-a-roons
Ingredients
Balls
- 1 cup rolled oats
- ½ cup ground flaxseed
- 1 tablespoon ground instant coffee
- ¼ cup unsweetened shredded coconut
- ½ cup almond butter (smooth)
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
Chocolate Drizzle
- ¼ cup coconut oil
- ¼ cup cocoa powder sifted if necessary
- 1 tablespoon maple syrup
Instructions
Balls
- Stir together the oats, flaxseed, coconut and coffee in a medium bowl.
- Add almond butter, maple syrup, and vanilla and mix well. Chill for 20 minutes. Roll into bite-sized balls.
Chocolate Drizzle
- Melt coconut oil. Mix in cacao powder and maple syrup.
- Drizzle mixture onto coffee bean balls (or dunk balls into chocolate using a fork)
