Hi Beauties!
I have another soup recipe coming your way. As I write this post, I'm looking out my window at the rainy, cold, and depressing weather. Nothing makes me crave warm soup or stews quite like today so I thought posting this recipe would make me feel a tad bit better. I mean there is nothing wrong with days like today, it sure does make you appreciate the warmer sunny days. Which is all apart of life!
Considering it is Halloween today, I feel bad for all those little kids running around collecting candy in this weather. And I also feel bad for the parents for have to stick it out for their kids! But thats all apart of parenthood, am I right?!
As I stare out my window, I don't see any kids coming my way yet.. even though we live in the country, we do still get a few children to our door on Halloween. So far, we have had zero ringing our doorbell! How many kids dressed up in costumes do you all get on October 31st!?
Anyways enough ranting about Halloween and rainy days, and lets talk more about this delicious soup! This is actually the first time I have ever made a soup using sweet potato! I have seen so many soup recipes using sweet potatoes and I couldn't resist giving it a try!
So without hesitation I pulled out my soup cookbooks in search of some inspiration. I read through a few recipes and then put them away and grabbed everything out of my fridge and pantry I wanted to use for my recipe.
Ingredients For Fire Roasted Sweet Potato and Tomato Soup:
- Sweet Potatoes
- Tomatos
- Vegetable Broth
- Garlic
- Onion
- Spinach
I actually bought a Kitchen Aid Immersion Blender last year (which was suggested to me by my dad), and I am so obsessed with it. Saves the clean up of a heavy duty blender. You just stick the blender into the pot of cooked veggies and then it blends them all up.
It makes a surprisingly smooth soup! And if you want to separate a portion of the veggies to keep it chunky, you can always do that! What ever your heart desires!

You will also need a high speed blender or the immersion blender I was talking about earlier. You will also need an pot, and of course a stove/oven.

Fire Roasted Tomato and Sweet Potato
Ingredients
- 8 medium red tomatos
- 4 medium sweet potato
- 4 garlic cloves
- 4 cups of vegetable broth low sodium
- ½ cup chopped baby spinach
- ¼ teaspoon of cayenne pepper
- pinch of salt and pepper
Instructions
- Preheat oven to 400 degrees F
- Slice sweet potato and onions then spread on nonstick sheet pan. Drizzle olive oil over top (optional). Half tomatoes and spread of baking sheet as well. Roast in oven for 30-40 minutes or until all veggies are soft.
- In a large pot bring vegetable broth to a simmer.
- Add in all ingredients (including baked veggies once they are done).
- Take the pot off heat and let cool for 5-10 minutes.
- Transfer to a blender, or put your immersion blender in pot. Blend all ingredients until fully smooth.
- Garnish with whatever you would like! Serve.
