Crazy to believe summer is already long gone and Halloween is right around the corner. Soon it will be Christmas time!
Speaking of Christmas, yesterday I asked Dylan when I could start putting up Christmas decorations and he just laughed and said "Not until Nov 1" haha so my count down is on!
But at least with Halloween around the corner, I have an excuse to watch all the scary movies I want without Dylan complaining. I absolutely LOVE a good horror movie. I love the supernatural movies over killer/thriller movies though. Currently, as I write this post, I am watching a new series that came out on Netflix called "The Haunting of Hill House". It is actually REALLY good. I am already two episodes in and it is holding my attention so far! SO I suggest hitting that series up if you like scary movies/series!
So back to this recipe.
This soup screams autumn time comfort food. There is nothing I love more then an autumn inspired soup on a cold fall day, with fluffy socks on and a warm scented candle burning.
Fall time just speaks to my soul.
This spiced pumpkin soup is:

The other great thing about this spiced pumpkin soup is that it only contains a few ingredients! The best part about making a recipe is already having all the ingredients in your pantry. That is why a lot of my recipes here on the Nikki's Plate are easy to make with minimal ingredients.
Ingredients for this spiced pumpkin soup:
- pumpkin purred (not pumpkin pie filling)
- coconut milk
- minced garlic
- low sodium vegetable stock
- two shallots
- salt, pepper, nutmeg, cinnamon, cayenne pepper
This soup is also super customizable. If you like your soup a little more creamy, add more coconut milk, if you like your soup more spicy, add more cayenne pepper. What ever your heart desires. That is the fun thing about cooking. You don't need to follow the recipe exactly. You can adventure outside the box and make it to your liking.
With this being said, I won't keep wasting your time.. because let's be realistic here, we are all busy people with lives to live and soup to be cooking!

Spiced Pumpkin Soup
Equipment
- Blender or Immersion Blender
Ingredients
- 2 ½ Cup pumpkin puree (not pumpkin pie filling)
- 2 tablespoon minced garlic
- 2 medium diced shallot
- 2 cups low sodium vegetable broth
- 1 cup coconut milk
- ½ teaspoon cayenne pepper (more or less to liking)
- ¼ teaspoon cinnamon and nutmeg
- pinch of salt and pepper
- pumpkin seeds for decorating (optional)
Instructions
- Take a large saucepan over low heat sauté shallot and garlic (using some olive oil).
- Cook for 3 to 5 minutes, or until browned.
- Add remaining ingredients into pot (except pumpkin seeds).
- Simmer on low.Put immersion blender into pot and puree the ingredients together. If you don't have a immersion blender, transfer soup to a regular blender. Blend until smooth.
- Continue to simmer until hot. Serve and sprinkle pumpkin seeds to preference.
