What could be more perfect for this time of the year... than vegan pumpkin spice almond milk. I have always been such a huge fan of almond milk. I put it in my coffee, in my oatmeal in all my baking and basically anything that requires dairy milk.
I don't even realize the taste of it now because I have been drinking it for so many years. At first I wasn't a huge fan but I kept adding it to things in replacement of milk and eventually I didn't even notice the substitution any more... and you can reach this conversion too! You just need to jump into it and start replacing dairy milk with any almond milk.
You should love almond milk too.. and here is why!
Almond milk is a perfect alternative to regular diary milk because it is packed with protein, fibre, and omega-3 fatty acids. One glass of almond milk contains vitamin B, iron, magnesium, zinc and vitamin E.
Almond milk contains about the same amount of calcium as dairy milk but without the mucous forming lactose... oh and did I mention almond milk has way less calories - hello bikini bod!! Have I converted you yet?
Because I have been enjoying almond milk for so long, I thought it would be fun to experiment with a fall inspired pumpkin spice almond milk recipe!
Homemade almond milk is actually incredibly easy to make. I have always been a buyer of the carton almond milk you find at the grocery strores. But have any of you actually looked to at the expiry dates on those boxes? They usually do not expire for a year! A YEAR. That straight up scares me. What did they put in the milk to make it stay fresh that long!
So I went on a hunt to find out how I can make my own almond milk without all the preservatives. I found a few recipes and tried them all, altered them and tried them again. This was the best way to make almond milk for me.
Pumpkin Spice Almond Milk Ingredients:
- raw whole blanched almonds
- himalayan pink salt
- pure vanilla extract
- pumpkin spice
You will also need a cheese cloth to strain the ingredients into milk. I love this cheese cloth from amazon.
I also added some pumpkin spice in it to fit perfectly into this fall season. What says fall more then pumpkin spice? I know I know.. Typical basic girl right here.
Almonds need to be soaked before you make the almond milk. This softens them and allows for easier blending. I found that the longer I soaked the almonds in the water, the creamer the almond milk was.

Pumpkin Spice Almond Milk
Equipment
- Blender
- 1 Cheese cloth or nut milk bag
Ingredients
- 1 cup raw whole blanched almonds
- ½ teaspoon of himalayan pink salt (divided in 2)
- ½ teaspoon pure vanilla extract
- 1 teaspoon pumpkin spice
Instructions
- Place almonds in a small bowl, cover with water.
- Add ¼ teaspoon of pink salt. Stir and let sit for at least 4 hours (best if left to soak overnight).
- Strain and rinse almonds (SAVE 3 CUPS OF THE WATER).
- Combine the soaked almonds, vanilla extract, remaining pink salt, and pumpkin salt in a blender with the 3 cups of saved water.Blend on low for 3 minutes, until smooth and creamy.
- Using a cheese cloth or nut milk bag, line a bowl and pour the almond mixture into the bowl.
- Lift up edges of cheese cloth, wrap the almond mixture and squeeze out all the milk into the bowl.
- Transfer the milk into a resealable glass jar and put in the fridge.
