I have tried SO many recipes because our summer garden always grows 100s of zucchini a season so we are always over loaded. I love to use up our zucchini so I have tried a million recipes. This one is a family favorite for sure!
Frying zucchini chips is the perfect way to give them a crispy, crunchy shell without all the fat. This Parmesan zucchini chips recipe uses an air fryer to get that perfect fried exterior, but without all of the calories and oil.
Air Fryer Parmesan Zucchini Chips are a delicious way to enjoy zucchini. The Parmesan cheese adds a savory flavor that goes so well with the zucchini. But if you are looking to make a dairy-free recipe, just leave out the cheese!

What You Need to Make These Air Fryer Parmesan Zucchini Chips:
- Medium sized zucchini
- Egg
- Flour
- Panko Bread Crumbs
- Parmesan Cheese
- Garlic Powder
- Onion Powder
- Salt and Pepper
How To Make The Best Air Fryer Parmesan Zucchini Chips:
First you are going to slice the zucchini into ¼ inch rounds. Use a sharp knife to avoid ripping the zucchini. Put in a bowl. Sprinkle flour over the zucchini and toss to ensure each round is lightly coated without clumps. Set aside.
In a small bowl crack the egg and whisk until yolk and whites combines. Set aside. In a second small bowl, combine the bread crumbs, parmesan cheese, garlic powder, onion powder and salt + pepper.
Next your are going to take one flour coated zucchini round, dip it in the egg then dip it in the bread crumb mixture. Make sure it is fully coated before transferring it to the air fryer basket. Repeat this process for each zucchini round until one single layer is in the basket. If you have an older air fryer, you may want to spray with olive oil before you air fry them. This will make sure each batch is super crispy!
Bake in the air fryer at 400 degrees for 8 to 10 minutes (or until the coating is golden brown). Flip the rounds half way through the cooking time. Serve with any dipping sauce your heart desires! I like to use ranch dressing or marinara sauce.
Tips for Making Crispy Parmesan Zucchini Chips
- Slice the zucchini thinly with a mandolin if you want extra crispy and crunchy zucchini chips.
- Use a paper towel to remove excess moisture from the zucchini slices before applying the flour.
- Coat the zucchini chips in non-stick cooking spray before baking them in the air fryer (if you have an older air fryer).
- Check your temperature frequently with a cooking thermometer. You want to cook these at around 400 degrees Fahrenheit for about 10 minutes, until they’re crispy outside and tender inside—but not mushy!
- I recommend eating them right away and not storing them for later. If you HAVE to store them, I would recommend using an airtight container in the fridge and then reheating in the air fryer for a few minutes. Do not microwave or they will end up mushy.
- If you are going to make these in the oven, bake at 400 for about 15 minutes or until golden brown on top.
