4 Ingredient Gluten Free Shortbread Cookies. Soft, delicious and easy to bake Christmas cookies!
Welcome to the first recipe released in December!! AHHH this is so exciting. I can finally unleash my Christmas spirit on everyone without them rolling their eyes at me! And what better recipe to publish then a Christmas shortbread recipe. This recipe just roars Christmas holidays!
So what is shortbread exactly? Shortbread is usually a cookie made with one part sugar, two parts butter, and three parts flour… This sounds delicious right? Yep. But not for a dairy and gluten free consumer like this ol’ gal!
I sat down at the kitchen table one morning with my laptop and a cup of coffee.. I started searching for gluten free and dairy free ingredients to put together to make the most perfectly soft and smooth shortbread cookies.
It only took two rounds of baking these cookies to find the most perfect combination!
P.s if anyone is wondering I am back from my cruise! It was absolutely incredible. We had such a wonderful time. The weather wasn’t the greatest, but we made the best of it. I recently bought the iPhone 8 Plus before I left for my trip. I backed up my old phone on and moved everything over via iCloud. When I got home I plugged my phone into my MacBook and iTunes automatically recovered everything from my old phone… which wiped ALL my photos off my phone from the trip. I was devastated. I was able to recover a few things from iCloud but most are gone. So my posts will have very minimal photos and I am sorry for that! Gotta hate technology at times… grrrrrr.
Now back to these “4 Ingredient Gluten Free Shortbread Cookies!”
These cookies are super easy to make, mostly because they are only 4 ingredients! Not counting the green and red candied cherries, which are optional.
I also made these gluten and dairy free (just like all my recipes on the blog). You can totally change the ingredients if you don’t need these to be gluten or dairy free. It is up to you of course, what ever your family needs/allergies are, you can make it work!
I used vegan earth balance butter and this gluten free flour!
I hope you enjoy these 4 Ingredient Gluten Free Shortbread Cookies
- ½ cup soft non-dairy butter
- 2 ¼ cups gluten-free flour
- ⅓ cup pure maple syrup
- ½ tsp pure vanilla extract
- ½ - 1 cup red and green candied cherries (optional)
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper or silicone mat.
- Using an electric beater on medium, combine butter, maple syrup and vanilla extract.
- Fold in flour using a wooden spoon. Add in candied cherries (if using).
- Once all well mixed, make small balls and push onto baking sheet, forming cookies.
- Bake for 12-16 minutes, or until edges are golden brown.
- Cool and serve!
