Hi Beauties!
Coming at you with another cookie recipe. And yes you are probably thinking "But Nikki, Christmas is long over, time to move on from cookie baking!"
I know, I know guys, but I just wanted to squeeze one more delicious cookie recipe out before moving on to New Years Resolution healthy recipes... slash forgot to post this one last week so you are getting it this week instead hehe.
And besides, you wouldn't want to miss these vegan ginger molasses cookies anyways! So you're welcome 🙂
These cookies are actually pretty delicious for a recipe that is on the healthier side. I use to have a hard time transitioning to a healthier option when it came to sweets, but now I actually prefer the healthier options. And these cookies are exactly why. It's so easy to eat healthier when you create a recipe that tastes so similar to the unhealthy version. So I am SUPER exact to be sharing this ginger molasses cookies recipe with you today!
These Healthy Vegan Ginger Molasses Cookies are:
- bursting with hints of cinnamon and ginger.
- vegan and gluten free.
- refined sugar free.
- crunchy on the outside yet chewy on the inside.
You can enjoy these cookies any time of the year too, you don't need to isolate them to the Christmas holidays. They are just too good to leave for a one-month indulgence.
You can also alternate the size of the cookies, I prefer small sized for this recipe. If you make them bigger you might have to bake them a little longer. The key is to watch the outside of the cookie verse the inside of the cookie. Once the outside is crisp and the inside is still soft, then they are done!
Ingredients needed for vegan ginger molasses cookies:
- Almond Flour
- Coconut Oil
- Oat Flour
- Baking Soda + Powder
- Coconut Sugar
- Ginger, Cinnamon + All Spice
- Unsweetened Coconut Milk
- Molasses
That's it, pretty simple and straight forward ingredients. I think the molasses and the coconut oil really hold these cookies together. I always look for what ingredients for best to hold baked goods together in vegan recipes. It is really hard to bake without using eggs. I find sometimes they just crumble apart.. but these held together very well!
So without wasting you time any further, lets jump right into the recipe shall we? If you have any questions about this recipe, feel free to shoot me an email, I am usually pretty quick at responding!
I hope you enjoy these healthier ginger molasses cookies!
