With Christmas around the corner, I am really trying to get my cookie recipes mastered. So don't be surprised if you see quite a few cookie recipes in the next few weeks!
These cookies are actually really good! I was surprised. It is always hard to make desserts taste good when you are trying to make them healthy.. and especially when you are trying to make them vegan and gluten free. Thats a whole lot working against these cookies!
But I feel like I am getting pretty good at healthy baking... because these cookies are BOMB.
These sugar cookies are:
- light and fluffy
- crumbly with each bite
- taste like Christmas shortbread cookies
- just a 1 bowl mess
- gluten free and vegan
I made shortbread cookie recipe last year on the blog and they turned out delicious! Which is why I felt like I should make a similar cookie with some different ingredients to have variety to my box of Christmas cookies this year!
My biggest challenge with this recipe was finding an alternative to Xanthan gum. Xanthan gum is a thickening agent used in a lot of gluten free baking. I used arrowroot instead to help bind these cookies together. Xanthan gum just isn't something I keep in my pantry.
The other great thing about these cookies are that they only take 30 minutes to make! There is nothing better then a cookie craving that can be cured in under 30 minutes! They are super easy to make if you have the ingredients.
Once you make the dough for these cookies roll them out and cut them into shapes. I decided to be boring and just used the lid of a mason jar to cut the dough into perfectly round cookies. I then melted some delicious vegan dark chocolate, and drizzle it across the cookies to give them a fancier look. BUT you could add what ever you want to the top.. make them more colourful or add some sprinkles. What ever your heart desires!

Chocolate Drizzled Sugar Cookies
Ingredients
- 1 ½ cup gluten free flour
- 2/4 cup organic cane sugar
- ½ tsp baking powder
- ½ cup melted coconut oil
- ½ cup coconut cream* (see notes)
- 1 tablespoon agave
- 1 teaspoon arrowroot powder
- melted dark chocolate chips (dairy free if making them vegan)
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
- In a large mixing bowl, combine all dry ingredients. Add in wet ingredients and mix.
- Knead dough until evenly combined. Roll out dough and cut cookies into desired shapes*
- Place cookies on baking sheet. Bake for 10-15 minutes or until golden.
- Cool for 15 minutes and drizzle melted chocolate if desired!
