I had this yesterday for lunch. So good. Having it again today.
Rice has always been my favourite go-to lunch. There are so many options for variations and it is easy to get your creativity spark in for the day! But tofu... tofu makes me sad. It makes me sad that it has such a bad rep! Many people turn their nose up at the thought of eating tofu. Why? The majority do not know how to prep it and cook it properly. Did you know that you can marinate tofu like a steak? Did you know you can brush it with olive oil, create kabobs then grill it? Did you know you can blend it into a sauce to replace mayo or sour cream?
Anyways enough about my rant and more about this recipe!
I started by sautéing the veggies and tofu. Make sure you use a good non-stick pan! On the side, I started creating the maple ginger sauce.
When the veggies are soft and the tofu becomes golden, add the cooked rice right into the pan and remove from the heat. Sprinkle seasonings and the maple ginger sauce. Allow the rice to soak up the juices in the pan.

Maple Ginger Tofu Stir Fry with Rice {Vegan & Veg}
Ingredients
For the stir fry
- 1½ cup uncooked brown rice
- 2 tablespoons extra virgin olive oil
- 14 ounces extra firm tofu
- 1 large white onion minced
- 1 red bell pepper roughly chopped
- 2 medium zucchini cut into cube pieces
For the maple ginger sauce
- 3 cloves garlic
- 2 tablespoons fresh ginger
- 2 tablespoons pure maple syrup more to taste
- ½ cup low sodium tamari sauce
- ¼ cup water
- ¼ cup rice wine vinegar
- ¼ cup extra virgin olive oil
Instructions
Maple Ginger Sauce
- Blend all the sauce ingredients together in a food processor until smooth.
Rice & Tofu
- Cook the brown rice according to directions on package.
- Cut the tofu into slices and press with a clean dish towel (or paper towel) to remove excess fluid (press twice). Cut the tofu slices into small cubes.
- Heat the olive oil in a large nonstick pan over medium heat.
- Add the tofu, peppers, zucchini and onion. Pan-fry until golden brown. Remove from heat.
- Add cooked rice, remaining spices and maple ginger sauce. Mix.
