Yes I have another pumpkin spice inspired recipe for you today... I have a problem. I just cant get enough this time of the year! I am totally one of those girls that goes crazy once Starbucks released the pumpkin spice latte in September.. I just can't help it!
This recipe is definitely a winner recipe because it combines two of my all time favourites; pumpkin spice + banana bread. This has comfort food written all over it.
This delicious loaf full of pumpkin goodness. I decided I am going to have to remake this recipe and give it to my brother.
He loves everything pumpkin and I feel like this recipe will be amazing for him! When ever I bake something, I always end of having someone in mind that would love what I create. I guess that is kind of why people bake right?
Usually I bake for my husband (still feels crazy saying husband!). He is my biggest cooking/baking fan. And I know he will be honest with me, because he hates "healthy food".
Sometimes I can trick him... other times its a lost cause. But thats why I started this blog.. to show people that even healthy food can taste delicious too.

These are my favourite recipes because I am SO lazy when it comes to cleaning the kitchen. I hate large messes. And I also hate complicated recipes. Who's with me on this?
So this recipe just speaks to my soul in all the ways a girl could hope for!
Another great thing about baking any bread, is you can freeze it and bring it out later! I love making a loaf and then slicing it up and freezing it. You can then pull out a few slices, throw it in the toaster and your good to go with a healthy breakfast for the day!
You really can't go wrong when it comes to baking healthy. FREEZE EVERYTHING. I promise you, you will thank me later for it!
Even when I am baking muffins, I always throw some in a zip lock bag and then into the freezer. When you are making you lunch for the day, you can quickly grab one of the zip lock bags with the bread or muffin in them and toss it into your lunch bag. Not only does this make a delicious healthy snack, it also acts as an icepack for everything else in your bag!

Pumpkin Spice Banana Bread Ingredient List:
- 2 ripe bananas
- pumpkin pureed (not pie filling!)
- coconut oil
- pure maple syrup
- chia egg
- vanilla extract
- oat flour
- baking powder
- baking soda
- almond meal
- pumpkin spice
- pink salt
- Pumpkin seeds for topping (optional)
To be honest.. I was super nervous to make this recipe because when you sit back and think about it.. banana + pumpkin isn't really the most popular flavour combinations. Right?
But... banana baking is becoming so popular in gluten free and vegan recipes. Why? Because bananas can have the consistency of dairy when baking. It gives baking the creamy moisture that dairy would give to a regular baked good.
So with that being said... get out your baking utensils and your pumpkin + banana ingredients and lets get baking!

Pumpkin Banana Bread
Ingredients
Wet Ingredients
- 2 small ripe bananas
- ½ cup pumpkin puree
- ¼ cup melted coconut oil
- ¼ cup maple syrup
- 1 chia seed egg (1 tablespoon chia seeds + 3 tablespoon water & set at room temp for 15 minutes)
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 ½ cup oat flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¾ cup almond meal
- ¼ teaspoon pumpkin spice
- ¼ tsp pink salt
- pumpkin seeds for topping
Instructions
- Preheat the oven to 350°F. Line an 8-inch loaf pan with parchment paper or greased foil.
- Mash peeled bananas in a large bowl. Add pumpkin puree, coconut oil, maple syrup, chia seed egg and vanilla.
- Add oat flour, almond meal, baking powder, baking soda and salt. Whisk together.
- Pour mixture into the parchment paper loaf pan. Smooth out with spatula or tap bottom of pan on counter to release bubbles.
- Bake for 1 hour (give or take 15 minutes). Test with tooth pick. Should come out clean. If wet on toothpick then bake longer.
