Last pumpkin recipe of the season, I promise! I just needed to share this soft and chewy cookie recipe with you. These Healthy Gluten Free Pumpkin Cookies are a delicious treat that you can feel good about eating!
These Healthy Gluten Free Pumpkin Cookies are super-easy to make and have just the right amount of pumpkin pie spice. They're also a great way to use up any leftover pumpkin puree you might have on hand!
You can make them in less than an hour, and they're great for baking with kids—they'll love helping you mix everything together! These are the perfect cookies for any time of year. They're light, fluffy, delicious and bursting with pumpkin flavor.
Vegan and Gluten Free Pumpkin Cookies
Pumpkin. Everything's pumpkin spice for me until the leaves have fallen off the trees. That's my rule... that I just made up...right now. I know a lot of people actually don't like pumpkin spice foods, but I am not one of those people that is for sure!
Vegan and Gluten Free Pumpkin Cookies Ingredients:
- vegan butter
- organic cane sugar
- brown sugar
- gluten free flour
- baking soda
- baking powder
- cornstarch or arrowroot powder
- pumpkin spice
- ground cinnamon
- vanilla extract
- salt
- coconut oil
- unsweetened almond milk
- pumpkin puree (not pumpkin pie filling!)
If you are feeling brave, you can add in chocolate chips to create gluten-free pumpkin chocolate chip cookies instead! You can also sprinkle some powdered sugar for a fun sweet texture on top!
Pumpkin Cookie Recipe Directions:
The first thing you are going to do is add the softened butter and coconut oil to a large mixing bowl and cream with an electric mixer for 1 minute. Then add the cane sugar, brown sugar and vanilla extract. Beat for 1 more minute. Add pumpkin and mix once more until fully combined.
Next add all remaining dry ingredients. Use over a swifter to ensure no clumps. This is important for perfect cookies! Then add almond milk and mix until a soft dough is formed. Create a log with the dough then freeze dough for 30 minutes on a baking sheet with parchment paper
Preheat your oven to 350 degrees. Slice the pumpkin cookie dough log into ½ inch discs and place them onto the parchment paper. Bake on the center rack for 10-12 minutes or very slightly golden brown. When baked, transfer to a cooling wire rack to cool completely.
Store them in an airtight container for up to 5 days in the refrigerator!
