Last pumpkin recipe of the season, I promise!
I just needed to share these soft and chewy GF pumpkin spice cookies with you because even Dylan (my now husband) liked them.. that's when I know they are a win!
And when the husband can barely tell that something is ACTUALLY gluten-free, then I just know that that recipe is going to be a keeper! And a keeper is always a recipe you all love.
When baking and cooking for Dylan, I usually avoid using the words "Healthy", "Gluten-Free" or "Dairy-Free" before he takes his first bite.
He is a simple grilled cheese, steak and potato kind of guy and I always struggle to get him to eat something on the healthier side.
One time I made Brussel sprouts for dinner, and in a very creative attempt to get him to consume these vegetables, I made a mouth-watering cheese sauce to put over his. Do you know what he did? He dipped bread into the cheese and left ALL the Brussel sprouts. COME ON. He is like my child. How do you get a grown man to eat his veggies? Someone HELP.
But I will continue to try and make foods that are healthy but taste good. when I can trick Dylan into consuming healthy food without him knowing, I feel like I have won! Anyone else in the same boat?
Enough ranting about my personal life and let's jump into these gluten-free pumpkin cookies, shall we?
Gluten-Free & Vegan Pumpkin Cookies
Pumpkin.
Everything's pumpkin spice for me until the leaves have fallen off the trees.
That's my rule... that I just made up...right now. I know a lot of people actually don't like pumpkin spice foods, but I am not one of those people that is for sure!
Here are some cute things to get into the Thanksgiving/Halloween spirit:
Ingredients Needed for These Gluten-Free and Vegan Pumpkin Cookies:
- gluten free flour
- baking soda
- baking powder
- coconut sugar
- pumpkin spice
- vanilla extract
- coconut oil
- pumpkin puree (not pumpkin pie filling!)
Basically there is nothing special when it comes to baking these cookies. They are regular cookies with regular baking instructions. I think the pumpkin puree really softens these bad boys up.
Just like using mashed or pureed banana in recipes, the pumpkin acts as a softening agent that really takes any fall baking to the next level.
There is something about pumpkin flavours though...
I could eat something pumpkin flavoured all fall long, but as soon as those leaves are gone, I instantly switch to Christmas flavours and scents. Isn't it funny how our mind and body work? We are always so ready for the next exciting holiday, even if we are obsessed with the previous one!

Healthy Gluten-Free & Vegan Pumpkin Cookies
Ingredients
Dry Ingredients
- 1 ½ cup gluten free flour
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ cup coconut sugar
- 1 teaspoon pumpkin spice
Wet Ingredients
- 1 teaspoon vanilla extract
- ½ cup melted coconut oil
- 6 tablespoons pumpkin puree
Instructions
- Preheat oven to 350 degrees. Line baking sheet with parchment paper. Set aside
- Melt coconut oil either in a microwave (using microwavable safe bowl) or in a small sauce pan. Add in remaining wet ingredients. Set aside.
- Combine dry ingredients in a medium size bowl. Start adding in wet ingredients, a little bit at a time. Once fully mixed, set in the fridge for about 10 minutes.
- Slightly wet your hands. Create tablespoon sized balls and press onto the baking sheet.
- Bake in the oven for about 10-12 minutes or until golden. Let cool for 5-10 minutes before serving.

Did you know... that the bright orange colour of pumpkins indicates that there is a rich antioxidant in them called beta-carotene (Vitamin A), which has been proven to help prevent certain types of cancer. They are also packed with Vitamin C goodness, iron and fibre! Bring on the pumpkin!

Who knew these little (or big) balls of orange joy were packed with so many amazing things for our bodies. Needless to say, maybe we should be eating them all year long!
