The softest gluten-free oatmeal chocolate chip cookies. WOW, that's a mouth full. Do you know what else is a mouth full? My mouth, currently stuffed with these cookies as I write this post. hehe
I feel like I have made SO many cookie recipes since I started this little blog of mine but honestly, I don't regret any of them! There is something about a soft chewy melt in your mouth cookie that warms my soul.
There are so many things about the perfect cookie that one must learn in order to master it. I still have lots to learn but I have learned a lot in my healthy baking time here. Back when I was younger I use to buy those cookie and cake mixes and follow the directions on them perfectly...but how boring is that! I love creating recipes that are fully my own and that include ingredients that don't hurt my stomach after eating...just like my original chocolate chip cookie recipe or my GF pumpkin cookies!
The Secret to Soft & Chewy Gluten-Free Cookies
Even though you may be here just for the cookies, I am going to go on a rant about these Softest Gluten-Free Oatmeal Chocolate Chip Cookies before I give you the recipe because there is something I have found that worked magic in these cookies.
When making the original batch of these cookies I didn't use any coconut oil in the recipe. On the second batch I made, I added in a little coconut oil and OMG did it ever make a difference. The second batch I made was BY FAR the softest gluten-free cookie I had ever tried.
The coconut oil added moisture to the inside of these cookies which made the inside soft and chewy but the outside still a little crispy. This is the perfect cookie in my books. You want a cookie that gives a little crunch on the outside but then is soft and chewy on the inside. My all-time favourite.
You can't buy cookies that taste like these in the store, I tell ya! You have to make them fresh to enjoy the tenderness of these chocolate chip packed beauties.
May I add that my feyonce even enjoyed these cookies. Yes, my chocolate-loving, pizza-eating feyonce loved these healthy yet soft gluten-free oatmeal chocolate chip cookies! SCORE!
I don't know why gluten-free cooking and baking has such a bad rep these days. You can literally make the most perfect cookies with gluten-free ingredients and not even tell if they are GF or not. Like COME ON! People need to stop bashing and start trying!
My favourite thing about these cookies was the size. I made them on the smaller size to make sure that I wouldn't beat myself up if I accidentally had two cookies instead of one. You thought I had some kind of recipe developer hidden secret for why I made them small right? Sorry to burst your bubble friends!
Even though I had a different reason for creating these small cookies, it turned out to be a lesson. I found that the smaller the cookie, the easier it is to create a cookie that is crisp on the outside and soft on the inside. The larger cookies tend to take longer to bake making the cookie more dried out and crumble easier. SO this baking experiment actually turned out to be a good lesson anyway!
Oatmeal Chocolate Chip Cookies Are Perfect for Holiday Parties
Also if you are making these for any holiday or get together, I can promise you that it would be a crowd-pleaser because these cookies are loaded with chocolate chips.. aka everyone's best friend. display them in a cute bowl or on a pretty plate .. and BOOM winner winner chicken dinner.
The oatmeal is a hidden healthy act that everyone will thank you later on for. Trust me. BEEN THERE. Oatmeal cookies also are frowned upon sometimes by non-healthy eaters because they don't taste AS good as regular flour cookie,. but I think that is bullllll. I think if an oatmeal cookie is made correctly that it can taste just as amazing as a regular cookie. Besides a cookie is a cookie right? Sugar and chocolate.. how could anyone go wrong with that?
Actually I might have to make these for our stag and doe meeting. Dylan and I are having our wedding party next weekend to help plan our stag and doe. SO I might have to add these cookies to my baking list now that I am thinking about it. The only thing is that I know the girls will appreciate all my healthy cooking but I can see the boys complaining. HA! Well, that is just too bad. They will survive!
P.s I am loving my new camera I got over Christmas. I upgraded from my very first DSLR camera which was a Canon Rebel, to the Canon EOS 80D. I am still using all my 50mm 1.8 lens which I believe has also taken my photography to the next level.. throwback to my very first blog post that I used my iPhone to take the photos with! SAY WHAT.
I have become obsessed with photography and have SO much fun creating recipes that I can shoot with my camera. It just warms my heart when I take a photo that looks amazing. I have issues clearly. BUT this is my hobby and it is my creative outlet that makes me so happy!

Soft & Chewy Gluten-Free Chocolate Chip Oatmeal Cookies
Ingredients
Dry Ingredients
- ¾ cup gluten free rolled oats
- ¼ cup gluten free oat flour
- ¼ cup raw coconut sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- ⅛ teaspoon salt
- ½ cup vegan chocolate chips
Wet Ingredients
- ¼ cup + 2 tablespoons natural unsalted almond butter
- 2 tablespoons melted coconut oil
- 1 chia seed eggs 1 tablespoon chia seeds mixed with 3 tablespoons of water
- ½ teaspoon pure vanilla extract
- ½ cup vegan chocolate chips
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper or silicone mat.
- In a large bowl, whisk together dry ingredients (minus chocolate chips), set aside.
- In a medium bowl, whisk together wet ingredients, set aside.
- Pour wet ingredients into dry ingredient bowl. Fold ingredients together until combined. Then fold in chocolate chips.
- Take VERY small handfuls of mixture roll into small balls (about 2 Tbsp). Flatten to baking sheet. Make about 20 cookies.
- Bake for 10-13 minutes, or until cookies are golden outside and soft inside.
