The first thing you are going to do is line two 15x10x1 inch pans with parchment paper. In a large saucepan, melt butter over medium-high heat. Add brown sugar and syrup, stirring to dissolve the brown sugar. Bring to a full rolling boil. Boil and stir for 1 minute. Remove from head and quickly stir in the vanilla.
Pour the caramel mixture over popcorn; stir lightly to coat. Using a rubber spatula, press the popcorn into prepared pans. Set aside to cool for a little bit. Pull the caramel popcorn into pieces. You will want to store it in airtight containers until ready to eat or gift.
