I hope everyone is having an amazing December this far! I am just settling back into the old routine now that I am back from my river cruise with AmaWaterways! I always find it so hard getting back into my old routine after traveling. When your traveling your are just on another wave length. You spend your time differently, you eat differently, your mood is different and your outlook on the world is completely different. Anyone else feel this way?
As amazing as the trip was, I am happy to be back at home and getting ready for Christmas. I am so happy I got our Christmas decorations up before leaving. Now I can focus solely on my Christmas shopping and baking!
You are probably wondering why I am posting a boring cookie recipe around the time of Christmas where I should be posting a more festive baking recipe. Well let me tell you.. there is nothing better then adding some simple cookies to your cookie tin this season.

Everyone loves good festive squares and cookies in your Christmas baking exchange but sometimes you get people who are super picky! And I find adding a normal cookie to your Christmas baking list will please a lot more people then you think! And I LOVE a good oatmeal cookie.
These Oatmeal Walnut Cookies are:

- transforms the typical lunch box chocolate chip cookie
- high nutritional value
- gluten free and melts in your mouth
Just a quick side note on baking gluten free.. Most oats on the market today are cross contaminated with wheat, barley, or rye so make sure you select a brand that is certified gluten free if you actually have an allergy to gluten. That labelling ensures that precautions were taken to avoid cross contamination!
Ingredients for These Oatmeal Walnut Cookies:
- gluten free rolled oats
- gluten free oat flour
- raw coconut sugar
- ground cinnamon
- baking powder & baking soda
- salt
- natural, unsalted almond butter
- coconut oil
- 1 egg (or chia egg if making it vegan)
- Dark chocolate Chips
- Chopped walnuts

Oatmeal Walnut Cookies
Ingredients
Dry Ingredients:
- ¾ cup Gluten Free Rolled Oats
- ¼ Cup Gluten Free Oat Flour
- ¼ cup Raw Coconut Sugar
- ½ tsp ground cinnamon
- ¼ teaspoon baking soda
- ¼ tsp baking powder
- ⅛ tsp pink salt
- ½ cup dark chocolate chips (vegan ones if needed)
- ¼ cup chopped natural walnuts
Wet Ingredients:
- ¼ cup natural unsalted almond butter
- 3 tbsp melted butter
- 1 egg (can use a chia egg if making these cookies vegan*)
- ½ teaspoon pure vanilla extract
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper or silicone mat.
- In a large bowl, whisk together dry ingredients (minus chocolate chips), set aside.
- In a medium bowl, whisk together wet ingredients, set aside.
- Pour wet ingredients into dry ingredient bowl. Fold ingredients together until combined. Then fold in chocolate chips.
- Take VERY small handfuls of mixture roll into small balls (about 2 Tbsp). Flatten to baking sheet. Make about 20 cookies.
- Bake for 10-13 minutes, or until cookies are golden outside and soft inside.
Notes
- 1 chia egg: 1 tablespoon chia seeds mixed with 3 tablespoon of water. Leave for 10 minutes until a jell forms.
- Keep these cookies in an air tight container in the fridge for up to one week.
